St Hildegard writes:

GARLIC (ALLIUM SATIVUM)
Garlic has the right warmth. It grows through the force of the dew from the beginning of the night right until daybreak.
It is better suited for food than leeks - both for the healthy and the sick.
Garlic has to be eaten raw, though, because the cooking process makes it powerless, similar to wine that has gone off. It should be eaten in moderate amounts only - otherwise the blood would become overheated.
