St Hildegard writes:

CELERY (APIUM GRAVEOLENS)

Celery is warm, naturally more cheerful than dry, and very juicy; it is not healthy when eaten raw because it produces bad juices. Its effects unsettle the mind.

Against WATERING EYES, crush celery with a little fennel, add the white of the egg to the juice and tie it over the eyes at night with a bandage. 

Against severe GOUT PAIN, however, grind dried celery, plus the third part common ruenutmegcloves and rockfoils (saxifraga) - always a little less of each, and take this powder on an empty stomach as well as after meals.
